An Odyssey In Taste

Daniel Wissman, often referred to in various national and international culinary circles as, “The Truffle Guru,” began his journey into the magical world of truffles over twenty years ago.  A native of Dallas, Texas, Daniel left his busy, work-a-day, life in New York City for Italy in 1994.  In the United States, Daniel read for a graduate degree in Aesthetics and Philosophy of Art, and, he wanted to apply theory to practice in Italy, the foundation of Western art and culture.Once in Tuscany, Daniel took an immediate interest in the gastronomic fruits of the earth which Italy is so famous for.  He began his odyssey in the discovery of taste when he nurtured to new life a long-abandoned, centuries old, fruit orchard which is attached to the classical gardens of his 17th century country villa.  Daniel conceived of and managed a graceful, historically accurate, restoration and decoration of the villa.  Restoring the formal gardens and the ancient fruit orchard on the estate to their former glories became his greatest passion.During that time, he became fascinated with the ancient art of olive oil production. The area in which his villa is located is famous for its delicious olive oil.  From his interests in the cultivation of fruit and the production of olive oil, he searched out and tasted for himself many of the gastronomic delicacies which Tuscany and other regions throughout Italy offer.After a visit to the regions around the cities of Siena, in Tuscany, Norcia, in southern Umbria, and, Alba, in Piedmont, Daniel tasted for the first time the “tartufo nero” and the “tartufo bianco,” or, the black truffle and the white truffle.  He was immediately transfixed and then transformed by the alluring taste of the truffle and its magical, almost other – worldly, character.  He knew then that he wanted to devote his best energies to discovering as much as possible about this rare and delicious gastronomic delicacy.  Everything about the truffle interests him:  how it is found in its natural habitat, its seasonal varieties, tastes and aromas, its history and lore and the various ways it is prepared in the kitchen.  He knew then that he was called to bring this magical fruit of the earth to others so that they too could be transformed by its sensuous powers and nutritional benefits.

Daniel has been on truffle hunts in the oak tree forests of Umbria and Tuscany and in the areas around the town of Alba in northern Italy.  He is a student and friend of the great tartufai, or, truffle hunters, of Italy in his quest to know more about this rare and unique delicacy.  As an ardent lover of fine food, Daniel also experiments with truffle recipes and truffle preparation in his kitchen.

The subtle and sublime taste of the truffle is a manifestation of its mysterious, not altogether understood, formation and growing processes.  The truffle has for the most part resisted attempts at systematic cultivation.  The very best truffles in the world grow on their own terms.  It is this very unique character of the truffle which most interests Daniel.  In a world full of genetically modified foods, artificially manipulated intelligence and planned growth processes, the truffle represents an ancient, powerful and natural life force.  This life force comes from the earth itself.  The truffle tempts us to discover it, and, if we are lucky enough to do so, it must then be coaxed gently from its terrestrial refuge into the light.

Once brought forth, the truffle offers us a complex, subtle and very rare palate of sensual, sensuous delights.
